This was something I tried while in Lancaster last month…it’s a common breakfast for the Amish and it is DEE-LISH! This recipe comes courtesy of “Taste of Pinecraft” cookbook–available at


1/2 c. vegetable oil
1/2 cup honey
1 cup milk
2 eggs, beaten
3 cups oats
1/2 cup coconut
1 tsp. salt
1 1/2 tsp. soda
1 tsp. vanilla
nuts & raisins (optional)

Mix all together and bake in 9″ x 13″ cake pan at 325 degrees for 25-30 minutes. Eat warm or cold with milk.
