This was something I tried while in Lancaster last month…it’s a common breakfast for the Amish and it is DEE-LISH! This recipe comes courtesy of “Taste of Pinecraft” cookbook–available at sherrygorebooks.com
1/2 c. vegetable oil
1/2 cup honey
1 cup milk
2 eggs, beaten
3 cups oats
1/2 cup coconut
1 tsp. salt
1 1/2 tsp. soda
1 tsp. vanilla
nuts & raisins (optional)
Mix all together and bake in 9″ x 13″ cake pan at 325 degrees for 25-30 minutes. Eat warm or cold with milk.
I'm wondering if this is similar to those yummy baked oatmeal bars that I've purchased at The Human Bean. This looks really good, really tasty, and most important, really inexpensive too make/bake. I'll put this on my shopping list for Sunday 🙂 🙂 🙂 Yummy, yummy and did I say yummy 🙂 🙂 🙂
my fav coffee shop makes baked oatmeal and they put dried fruit (including dried cranberries) in it…yum yum…
