Good Eats: Eskimo Bars!

My husband tried an experiment last weekend: homemade Eskimo bars. A looooooonnnnng process! First the vanilla ice cream (that alone takes him two days), then the brownie base, then freezing the two together, then the dipping in chocolate. That’s the part I hung around for.


Getting the brownie/ice cream out of pan. Then the Ice Cream Maker has to measure. By the way, he works in finance and accounting.


Then they have to freeze again before the dipping.


And here they are! DELICIOUS! Not sure they will be rolling off the assembly line anytime soon, but what a treat!

    Home made Eskimo Bars! What a wonderful treat that must be. My mouth is watering excessively!
    Unfortunately, I have been gluten-free and dairy-free for about a year, and would not be able to partake, but it doesn’t stop me from wishing.
    Thanks for sharing your hubby’s wonderful talent in the kitchen.

    • Oh Shirley…you’re nice to say that when you can’t partake! So glad there are options for non-gluten. Seems like many of my friends are needing to avoid gluten products. They feel so much better that it’s worth it. Hard, though!

    My 8-year-old has asked me to make an ice cream cake for her birthday treat. I’ve been brainstorming trying to figure out something that a not so creative cook like me could make. I think the solution may be in going small. Thanks for the idea.
